Chef Bill's "Lobster Risotto", servered over orzo pasta with chunky vegetables and fresh herbs took the gold medal earning Chef Bill the title of "Lobster Chef of the Year" for 2004.
In 2005, Chef Bill emerged victorious with a competition sponsored by the American Fig Council. His Fig Salad, made with figs, warm goat cheese, polenta, wilted greens and pomegranate dressing took first place in a nation-wide competion. Chef Bill took 2nd prize in 2004 from the California Asparagus Commission for his French Fried Asparagus with Cabernet Ketchup recipe.
Chef Bill took top honors for the Best Colorado Lamb Dish with his Braised DPA Lamb Shank. Made with Denver Pale Ale ("DPA" to its fans), the recipe received its honor from the Colorado chapter of the American Culinary Federation. Go to The Great Divide Brewing Company to read about this award.
